Zucchini Chips
There is nothing worse than wanting to enjoy dishes such as nachos, but not being able to wrap your head around eating 600 calories worth of tortilla chips.
Don't worry, I gotchu!
These super easy zucchini chips are going to solve all your problems!

Ingredients:
1 large zucchini (Will make roughly 50 chips if you slice thinly!)
2 tbsp olive oil
salt to taste
other: paper towel
Instructions:
Preheat oven to 110 degrees celsius
Line 2 baking trays with baking paper and set aside
Slice your zucchini as THIN AS POSSIBLE! I have a machine to do this, but a knife works too!
Once sliced, place the zucchini on the paper towel to absorb as much liquid as possible
In a small bowl, add olive oil and salt
Add zucchini and coat all slices in the oil mixture
Transfer zucchini slices to the baking trays, and bake for 1.5-2 hours, or until crisp
Let the chips cool before serving
