Sugar Free Rocky Road

This recipe is an absolute WINNER!

It takes 2-3 minutes to make, 10 minutes to set in the freezer (30 minutes in the fridge), and tastes like pure heaven! The best part? It only has 87 calories!


  • 2 x Atkins milk chocolate bars or similar

  • 70ml sugar free maple syrup (I used Queen)

  • 6 x Gullon Chocolate digestive biscuits or similar

  • 150g natural peanut butter

  • 1 packet sugar free marshmallows (I used Sugarless Confectionery 50g bag)

  • 20ml Coconut Oil


  1. In a food processor, blend the biscuits into a crumb, set aside

  2. Slice the marshmallow into small pieces, set aside.

  3. In a saucepan over low heat, mix Atkins chocolate, maple syrup, peanut butter, and coconut oil. Stir until you reach a smooth consistency.

  4. Remove saucepan from heat, and pour biscuit crumbs and marshmallows. Stir until combined.

  5. In a silicon baking dish (or tin lined with baking paper), pour the mixture, and smooth over with a spoon.

  6. Chill in the freezer for 10 minutes, or the fridge for 30 minutes.

  7. Cut into 24 serves.
