Let's be honest...pancakes are life. No one should ever have to go without pancakes.
After trial and error, multiple recipe alterations, and so on, I'm pretty sure I've finally nailed the healthy pancake game!
This recipe has:
compared to your standard serve of pancakes which has about 240 calories.
500g powdered stevia (or another natural sweetener)
60g almond flour
4 eggs, separate yolks for egg whites and place in 2 bowls
20g baking powder
2 tsp vanilla extract
10ml extra virgin olive oil (for pan)
Whisk egg yolk until combined.
Add almond flour, baking powder, and vanilla extract, and mix until paste-like
With an electric mixer, whisk egg white on high until pale.
Slowly add the powdered stevia, and continue to beat on high until fluffy (almost like meringue! )
Combine all ingredients. Stir until one color.
Spray a pan with olive oil. Pour mixture into your pan, and then cover with a lid (this helps them rise!)
Flip after 45sec - 1 min, repeat.
Serve with sugar-free maple syrup, berries, or whatever topping you prefer!
