Healthy Loaded Nachos

I thought I would share with you my go-to recipe when I want something quick, easy, and healthy!

Zucchini nachos! Woop Woop!


For the chips

Zucchini chips - found here:

For the guacamole

  • 1 large, ripe avocados, roughly chopped or mashed

  • 1 tbsp lime juice

  • Tabasco sauce - Optional

For the beans

  • 400g can red kidney beans, drained and rinsed

  • 1 garlic clove, crushed

  • 1/2 tsp chili powder


  • 1 jalapeno chili

  • 80g mozzarella, grated

  • coriander leaves, chopped

  • 1 jar of low-calorie salsa

  • Diced tomato - Optional


  1. Pre-heat oven at 180 degrees celsius

  2. For the guacamole, use a fork to mash the avocado

  3. Add lime juice and stir until combined. Set aside

  4. For the beans, empty them into a bowl and stir in crushed garlic and chili powder

  5. If desired, add 2 tbsp of water and mash. Set aside

  6. Scatter zucchini chips on a tray lined with baking paper.

  7. Add beans, and then add salsa.

  8. Scatter jalapenos and mozzarella on top

  9. Bake for 5 minutes

  10. Remove from the oven and top with guacamole and coriander (if desired)
