Healthy Loaded Nachos
I thought I would share with you my go-to recipe when I want something quick, easy, and healthy!
Zucchini nachos! Woop Woop!

Ingredients:
For the chips

High Protein, Low Carb chips - found here: https://www.marleejaynne.com/post/high-protein-low-carb-nacho-chips
For the guacamole
1 large, ripe avocados, roughly chopped or mashed
1 tbsp lime juice
Tabasco sauce - Optional
For the beans
400g can red kidney beans, drained and rinsed
1 garlic clove, crushed
1/2 tsp chili powder
Other
1 jalapeno chili
80g mozzarella, grated
coriander leaves, chopped
1 jar of low-calorie salsa
Diced tomato - Optional
Instructions:
Pre-heat oven at 180 degrees celsius
For the guacamole, use a fork to mash the avocado
Add lime juice and stir until combined. Set aside
For the beans, empty them into a bowl and stir in crushed garlic and chili powder
If desired, add 2 tbsp of water and mash. Set aside
Scatter zucchini chips on a tray lined with baking paper.
Add beans, and then add salsa.
Scatter jalapenos and mozzarella on top
Bake for 5 minutes
Remove from the oven and top with guacamole and coriander (if desired)
