Healthy French Toast (Keto)

I was tossing up whether or not I should post this recipe. I mean, french toast is pretty straight forward.

But then I realized that there aren't a whole lot of "cleaner" versions out there, and that kind of sucks. So this is my take on french toast, the ketogenic or low carb way!


  • 2 slices of Bakers Life"Higher-Protein" bread, found at Aldi (or similar)

  • 1 large egg

  • 1/4 cup almond milk

  • 1/2 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1 tbsp sugar-free maple syrup, and even more for the topping!

  • 1/2 tsp coconut (for pan)

  • Desired toppings such as strawberries, blueberries, and sugar-free chocolate chips


  1. Whisk together eggs, almond milk, vanilla extract, cinnamon, nutmeg, and maple syrup in a large bowl.

  2. Place mixture in a shallow bowl

  3. Soak slices of bread in the mixture, flipping and soaking both sides

  4. Cook over medium heat with coconut oil until lightly brown, then flip and repeat

  5. Serve with maple syrup and your choice of topping
