Hey beautiful people! When checking my blog requests this morning, I noticed I had 42 banana bread requests! FORTY-TWO! oh my god!!!
So I gotta give the people what they want!
Say hello to my healthier banana bread!
1/2 cup extra virgin olive oil (Or coconut oil)
2 large eggs
1/3 cup sugar-free maple syrup
1/4 cup almond milk
1 tsp vanilla extract
2 very ripe mashed bananas
1 3/4 cups wholemeal flour (or almond flour)
1 tsp ground cinnamon
1 tsp baking soda
½ tsp salt
1/2 cup sugar-free chocolate chips
Pre-heat oven to 180 degrees celsius.
Line a bread tin with baking paper
In a bowl, combine all dry ingredients, and set aside.
In a large bowl, combine all wet ingredients using an electric mixer.
Gradually pour dry ingredients into wet ingredients and beat until completely combined.
Pour mixture into the bread tin and bake for 50 minutes or the top springs back (You can also use a knife or toothpick inserted into the center)
Let cool for 10 minutes before slicing
Macronutrients per slice (12 slices per loaf)
