Healthy Apple Pie

Who doesn't love apple pie? It's an absolute favorite in my house, so this healthy apple pie is a great alternative!



Ingredients:

Crust

  • 1 1/3 cups oat or almond flour

  • 1/2 cup powdered stevia

  • 1/4 tsp cinnamon

  • 1/4 tsp salt

  • 1/4 cup oil

  • 2 tbsp water

Filling

  • 4 peeled apples, sliced thinly

  • 1 tbsp sugar-free maple syrup

  • optional 1/2 cup raw walnuts, diced

  • optional 1/2 cup sultanas

Crumble Topping

  • 1/2 cup rolled oats

  • 1/2 cup oat or almond flour

  • 1/2 cup powdered stevia

  • 1/4 applesauce

  • 1/4 tsp salt


Instructions:

  1. Preheat oven to 180 degrees celsius. You will need an 8-inch cake tin.

  2. Line the bottom of an 8-inch springform tin with baking paper.

  3. In a bowl, combine all crust ingredients, starting with the dry ingredients and adding the wet. Mix until a dough forms.

  4. Transfer to the baking tin, covering the tin in an even layer of dough, and bake 10-12 minutes.

  5. Mix the apple and sweetener in a bowl, then pour over the baked crust.

  6. In another bowl, combine all crumble ingredients. Sprinkle the crumble over the apples, then bake for 1 hour or until apples are soft.

  7. Remove from oven and allow to cool before removing from the tin
