Not only is this quiche extremely tasty! It freezes great, is easy to make, and makes 6 serves!
250g frozen chopped spinach, thawed
1 bunch spring onions, finely chopped
4 large eggs, whisked
500g full fat cottage cheese
250g grated cheddar cheese
Optional: Cherry tomatoes, mushrooms, and other low carb vegetables
Preheat your oven to 180 degrees c.
In a saucepan on medium heat, add spinach until soft. Drain any liquid.
Add in remaining ingredients, stirring until combined.
Continue stirring until cheese has melted and you have a gooey consistency.
Transfer mixture into baking dish and place in the oven uncovered.
Bake for 40 minutes - 1 hour, or until the top is lightly browned.
