When you take on the keto lifestyle, cheat meals can become a little complicated. Going out for ice cream, or throwing back a burger doesn't fit the "high fat, low carb criteria", so we need to get creative! Introducing the lemon cheesecake cup!
Now, I'll let you choose the toppings you want, but for today we are just going to make the cheesecake itself!
250g cream cheese, room temperature
30g powdered sweetener (I used Monk Fruit sweetener)
100g unsalted butter, room temperature (I used Nuttlex Lite)
10g vanilla extract
1/2 lemon, juiced
Using an electric mixer, beat the cream cheese and butter in a bowl until combined.
Add in the lemon juice, vanilla extract, and sweetener and continue to beat for 2-3 minutes until smooth.
Spoon into 6 separate bowls / glasses and refrigerate.
